Banana PB Overnight Oats FTW

Happy Monday folks! Hope all of the Minnesotans out there are doing well with all of that wet snow piling up today. I have been boarded up inside for a good part of the day giving me some time to write. Time management can be tricky, but do you know what helps? Overnight oats! (Yeah, that connection was a little bit of a stretch)

If you have been following my instagram/Facebook for a while, you know that last year I went through a major overnight oats phase. Like an every night prepping, every morning eating, kind of routine. I fell out of that cycle, majorly, last fall. I don’t remember exactly why… but… recently, everything changed (wow, this is an overdramatic intro…).

This past week, I was surfing through the gram the other day and saw these beautiful pictures of Banana Peanut Butter Overnight Oats by the one the only Taylor of Food Faith Fitness. I was immediately inspired, and now am on my way back into the overnight oats groove. Super tasty, easy to prep, and packed full of filling goodness.

All you do is throw your old fashioned oats, almond milk, peanut butter, and mashed banana into a mason jar, bowl, or tupperware before bed, and VIOLA, it’s all done by the time your eleventh smash of the snooze button. All of the “cooking” happens when your eyes are shut… That is my kind of meal prep. 🙂

The recipe calls for peanut butter powder, but I had too many varieties of jarred PB cluttering up my cupboard to not use it all up. I think I may have put in too much peanut butter, but… what are you gonna do… right? I also threw a tsp or two of chia seeds into the mix because I’m a loose cannon when it comes to freestyling and eye-balling.

For presentations sake, I sliced up some extra banana and drizzled some peanut butter on top. What is that phrase? We eat with our eyeballs, first? My eyeballs were extra hungry.

I was feeling so inspired that I did a proper staged food photo shoot; which, I haven’t had time to do in weeks. Nothing like tossing oats all over my countertop to get those creative juices flowing early in the morning. He he he!
