Raisin Bread for St. Patrick’s Day
Amid all the chaos of the coronavirus situation, I am writing from my parent’s dining room table in Central Maryland. Social distancing has led to a lot of baking and cooking from my end! In honor of St. Patrick’s Day (one of the best days of the year), I wanted to make a fresh loaf of Irish Soda Bread. From all of the recipes that I’ve read (here and here), this is basically a bread loaf-sized cakey buttermilk biscuit made with flour, salt, butter, buttermilk, baking powder, baking soda, sugar and raisins. This sounded like a great idea, except, along with toilet paper, the grocery stores were also fresh out…

SOUP-er Golden Coconut Lentil Soup
Howdy folks! It’s been a while since I posted, so I wanted to hop on and chit chat about my life and lunch today. Work for me has been super crazy busy for the last couple of weeks. #NationalCerealDay is coming up on WEDNESDAY (3/7), which means that there has been a lot on my plate for my General Mills work. I’ve also had a couple of freelance projects with tight timelines. But, I’m doing my best to stay on top of everything. Whenever a busy period like this happens, I crave spending time in the kitchen. Chopping vegetables and tasting my soup forty-five times really refuels my pursuits. This…

Banana PB Overnight Oats FTW
Happy Monday folks! Hope all of the Minnesotans out there are doing well with all of that wet snow piling up today. I have been boarded up inside for a good part of the day giving me some time to write. Time management can be tricky, but do you know what helps? Overnight oats! (Yeah, that connection was a little bit of a stretch) If you have been following my instagram/Facebook for a while, you know that last year I went through a major overnight oats phase. Like an every night prepping, every morning eating, kind of routine. I fell out of that cycle, majorly, last fall. I don’t remember…

Getting Senti-Lentil with Coconut Lentil Soup
Today was work from home Wednesday (woot! woot!), and I carved out an hour of time to make a new recipe I saw on Facebook earlier this week. Vegan Coconut Lentil Soup from Bon Appetit. And it did not disappoint one bit. Before I go any further, a note on lentils, as I reminisce and get a bit… Senti-Lentil… tee hee. I don’t know if I’ve ever had lentils before… Maybe they were snuck into something, but I can’t remember ever eating them. I definitely don’t remember cooking them. With that in mind, I spent a solid 15 minutes in the grocery store searching for the darn little legumes. That’s…

Sunny Days and Summer Squashes
I can’t believe that July is over and August is HERE! I am a Leo, so this is a pretty exciting part of the year for me. NEVERTHELESS — This past week (and really this whole summer) has been rocking at full throttle, and I wanted to check in and let you know about a few fun life updates that went on in the month of July: Vacationed with the best of them. Between an amazing 4th of July trip to Texas and a family vacation to the lake trailer out in Wisconsin to celebrate three birthdays including my sister’s 21st, July has been a wild ride! But, big news, I…
