• Fresh theme; fresh(ish) start

I began LivingNimbly over a year ago as a way to catalogue and process my life experiences. I knew that I wanted to blog about adjusting to a new city (DC –> MPLS). I knew that I wanted to talk about my experiences working in the communication field (Freelance + working at General Mills). I knew that I wanted to use this blog as a platform to connect with people, adding to the collective of stories stored in digital spaces (blogger meetups, online groups, etc.). This is what I wanted to do with LivingNimbly. At the end of the day, I created a food-focused blog. That wasn’t what I originally saw…

  • Lowertown Pop Preview

Local artisans, craftspeople, and makers, oh my!  The Lowertown Pop 3rd Annual Makers Market at Union Depot is coming up this month, and I am so excited. You all know I love a good locally made item… Soooo, I was invited out to the Union Depot for a preview of the event last week and wanted to hop on the horn to promote the event a little bit. Shout out to MNBloggerBash and Lowertown Pop for the invite. I got to meet so many cool folks that were following their passions and making beautiful items. The event is coming up on March 24th, 2018 from 10AM – 4PM at Union Depot in St. Paul. I’m…

  • SOUP-er Golden Coconut Lentil Soup

Howdy folks! It’s been a while since I posted, so I wanted to hop on and chit chat about my life and lunch today. Work for me has been super crazy busy for the last couple of weeks. #NationalCerealDay is coming up on WEDNESDAY (3/7), which means that there has been a lot on my plate for my General Mills work. I’ve also had a couple of freelance projects with tight timelines. But, I’m doing my best to stay on top of everything. Whenever a busy period like this happens, I crave spending time in the kitchen. Chopping vegetables and tasting my soup forty-five times really refuels my pursuits. This…

  • Banana PB Overnight Oats FTW

Happy Monday folks! Hope all of the Minnesotans out there are doing well with all of that wet snow piling up today. I have been boarded up inside for a good part of the day giving me some time to write. Time management can be tricky, but do you know what helps? Overnight oats! (Yeah, that connection was a little bit of a stretch) If you have been following my instagram/Facebook for a while, you know that last year I went through a major overnight oats phase. Like an every night prepping, every morning eating, kind of routine. I fell out of that cycle, majorly, last fall. I don’t remember…

  • Getting Senti-Lentil with Coconut Lentil Soup

Today was work from home Wednesday (woot! woot!), and I carved out an hour of time to make a new recipe I saw on Facebook earlier this week. Vegan Coconut Lentil Soup from Bon Appetit. And it did not disappoint one bit. Before I go any further, a note on lentils, as I reminisce and get a bit… Senti-Lentil… tee hee. I don’t know if I’ve ever had lentils before… Maybe they were snuck into something, but I can’t remember ever eating them. I definitely don’t remember cooking them. With that in mind, I spent a solid 15 minutes in the grocery store searching for the darn little legumes. That’s…
